The newest addition to our Balsamic Vinegar lineup is our delicious More Than Olives Dark Chocolate Balsamic Vinegar.  The rich deep flavors of dark chocolate are combined with a cask aged density balsamic vinegar. It has become a new favorite for customers who love to use balsamic in their desserts. It is deliciously rich and deep in flavor! Perfect for drizzling over fresh summer strawberries, raspberries, and blackberries. Spoon those berries over your ice cream for an elevated dessert. Drizzle our Dark Chocolate Balsamic over frozen yogurt and bananas, or a slice of cheesecake. Blend a little into whipped cream for topping morning waffles. This balsamic is delicious used as a glaze on beef or pork. Combine it with our fruity More Than Olives Blood Orange Olive Oil and use it to brush on chicken while it is roasting in the oven or cooking on the grill. If you want to refill a bottle you’ve already purchased, we now have two options. A 16-oz container and a 50-oz pouch keep your Balsamic Vinegar in pristine condition by preventing air from entering the pouch as you use the contents.

Site Selection

  • Choose a location with excellent sunlight to ensure full sweetness and color.
  • Good airflow reduces fungal pressure, especially in humid or coastal climates.

Soil Preparation

  • Prefers well-drained loam or sandy loam; avoid clay-heavy or waterlogged soil.
  • Add compost to improve drainage and fertility.
  • Ideal soil pH: 6.0–7.0.

Planting Instructions

  1. Plant at the same depth as in the nursery pot.
  2. Water deeply and mulch with 2–3 inches of organic matter.
  3. Keep mulch a few inches away from the trunk.

Watering & Fertilizing

  • Maintain consistent moisture during the first 1–2 years.
  • Deep water 1–2 times per week in heat or drought.
  • Peaches are medium feeders—use a balanced organic fertilizer in early spring if growth appears weak.
  • Avoid overfertilization, which reduces fruit quality and increases disease risk.

Pruning & Graft Management

  • Prune more vigorously growing grafts to maintain balance across the tree.
  • Encourage an open center to improve light penetration.
  • Thin fruit clusters to improve size and prevent limb damage.
